Growing season

2025 was one of the three hottest years on record in Champagne, with temperatures very often above the ten-year averages and two heatwaves, the first in late June and the second in early August. Flowering, however, took place at the start of June in relatively cold conditions, and Sebastien Debuisson, director of technical services at the Comite Champagne, identified that as the moment yields were compromised, particularly in the earliest sectors. From there the season accelerated. The interval between flowering and harvest came in at just 83 days, exceptionally short, and Heloise Mahe, who heads grape and wine quality at the Comite Champagne, described a flash veraison completed in under a fortnight despite a lag at the start of August. Water conditions were ideal throughout, and the combination produced a ripening dynamic the Comite Champagne called unprecedented for the region, with daily sugar accumulation hitting 0.34 degrees per 24 hours in the first week, a rate never previously recorded. The average official opening date for the harvest was announced for 25 August, and the Comite Champagne published start dates by commune and variety on 14 August. Growers preferred to wait a few days beyond the official date, and picking then spread out without a problematic peak. Debuisson noted this was the seventh August harvest since 2000. Weather during picking stayed kind, with temperatures slightly below the usual late-August norms, and Champagne sat between two large rain fronts that touched the Cote des Bar without causing serious trouble. Sanitary condition was very satisfactory, if fragile throughout. Potential alcohol averaged 10.7 percent across the appellation, with Chardonnay reaching a record 11.1 percent, Pinot Noir 10.6 percent, and Meunier 10.5 percent. Crucially, acidity remained remarkable across all three varieties with very good balance, so the high degrees did not come at the cost of the freshness the region depends on. Sanitary state was very satisfactory, though it stayed fragile right through picking. Concentrations of glycerol, gluconic acid and acetic acid rose towards the end of the harvest from 3 September onwards, but stayed below the decade averages and mostly below alert thresholds. The one flag raised by the Comite Champagne was a very marked nitrogen deficiency, confirming what it called a heavy trend of recent years and requiring particular attention during fermentation, which can turn sluggish as a result.

Bunch weights and the shape of the crop

Bunch weights at the publication of the ban des vendanges came in below both forecasts and the decade averages, and the shortfall was not evenly distributed between the varieties. Chardonnay was the problem: the Comite Champagne noted the bunches never filled out, struggling to reach 130 grams across the appellation, with 131 grams in the Cote des Blancs, 120 grams in the Sezannais, and 114 grams in the Vitryat. Pinot Noir did reasonably well at around 160 grams on average, apart from certain sectors of the Cote des Bar that were affected by the heatwave. Meunier behaved very well indeed, with bunch weights comfortably above 150 grams. That pattern, light Chardonnay bunches against healthy Meunier, is worth carrying into any reading of what the year's base wines will offer as blending components.

The 9,000 kg yield decision

The Comite Champagne executive board set the 2025 yield at 9,000 kg per hectare on Wednesday 23 July 2025, after weeks of discussion between growers and houses. At that level the harvest corresponds to around 258 million bottles against sales forecasts for 2025 of roughly 270 million, meaning the region began a deliberate destocking of about 12 million bottles. Maxime Toubart of the SGV described it as a slight destocking effort aimed at matching production to sales forecasts, and restated the long-term target of selling 300 million bottles a year. David Chatillon of the UMC explained that the usual model, which calculates yields from stock levels at 31 July and six-year sales projections targeting an instant stock ratio of 4.2 years, was suspended for 2025 because it would have produced yields too low for many growers; stocks stood at 1.28 billion bottles, about 4.8 years' worth. Growers also gained a proposed increase, from 5 percent to 15 percent, in the share of harvest they may buy from others. The decision was not unanimous. The Federation des Vignerons Independants de Champagne opposed it, having argued for 10,500 kg/ha, and its president Christine Sevillano warned that some operations would struggle financially below 9,500 kg/ha and criticised a decision she said rested on stock levels alone.
