Grapes and Wine Styles
Xinomavro is the sole variety permitted under the PDO Amyntaio designation, used to produce dry red wines, still rosé, and sparkling rosé. The original PDO was established in 1972 for dry reds and sparkling rosé in the blanc-de-noirs style; still dry rosé was formally added to the designation in 1995, making Amyntaio Greece's first appellation to hold PDO status for rosé wine. The high elevation and acidity retention make Xinomavro from Amyntaio particularly well-suited to sparkling production, a style the appellation has championed more than any other Greek region. The area around Amyntaio has a winemaking heritage stretching back to the 3rd century BC, when the ancient city of Kella was celebrated for high-quality wines. Production continued through Ottoman rule and into the early modern era, with wines exported to the Balkans and Central Europe. The phylloxera crisis and the disruptions of two World Wars caused a sharp decline. Greek legislative decree 243/1969 established the OPAP appellation framework; Amyntaio was ratified in 1972, following the 1971 ratifications of Naoussa, Mantinia, Nemea, Santorini, and Rapsani. EU Council Regulation 479/2008 effective 2009 harmonized OPAP and OPE under the unified EU PDO designation, with the 1995 amendment having extended Amyntaio to include still rosé wine; the OPAP red neck band is retained as a bottle-level dry-wine signal.
