Standish Wine Co
How to say it
Dan Standish's small-production Barossa Valley single-vineyard Shiraz boutique, building one of Australia's most sought-after cult Shiraz portfolios from old-vine sites at Greenock and Schubert Vineyard.
Standish Wine Company was founded in 1999 by winemaker Dan Standish, a former Penfolds winemaker (including time on the Grange team) who left the corporate Australian wine world to build his own single-vineyard estate. The company sources from old-vine Shiraz blocks in the Greenock district of the Barossa Valley, including the family's century-old Schubert Vineyard and other sites. Production is intentionally small, around 1,500 to 2,000 cases per year across the Standish range, building one of the most respected modern Australian Shiraz boutique reputations. Allocations are tight and the wines have developed a strong cult following internationally.

Dan Standish and Founding
Dan Standish grew up in the Barossa Valley as part of a family with deep regional roots, including the Schubert Vineyard at Greenock that has been in family hands for generations. After studying at Roseworthy Agricultural College, Standish worked through the 1990s in winemaking roles including positions at Penfolds, where he spent time on the Grange winemaking team. The experience exposed him to the deepest traditions of Australian premium Shiraz production: multi-region blending discipline, old-vine fruit sourcing, oak management, and the cellar-development approach that defines the most age-worthy Australian reds. In 1999 he left Penfolds to establish Standish Wine Company, focused on single-vineyard old-vine Shiraz from family and adjacent Greenock-district sites. The first commercial vintage of The Standish was 1999. The boutique has built its reputation over two decades through consistency, terroir-driven expression, and the credibility of Dan Standish's winemaking lineage.

Greenock District and Vineyards
Standish sources principally from the Greenock district of the western Barossa Valley, an area defined by red-brown clay loam over ironstone and a marginally warmer microclimate than the Barossa floor average. The Schubert Vineyard, owned by Dan Standish's family, is the heart of the estate: Shiraz vines planted circa 1912 on the Schubert family land that has been in the family for over a century. The vines are dry-grown and ungrafted on pre-phylloxera rootstocks, with old-vine yields around 2 tonnes per hectare. Adjacent Greenock sites contribute additional fruit, all from old-vine plantings ranging from 1880s through to the early 20th century. The Greenock terroir produces Shiraz with deeper concentration, richer dark fruit, and earthier structural character than wines from the cooler eastern Barossa or Eden Valley sides of the zone. Standish farms the vineyards under low-intervention practices, focusing on natural plant balance and limited canopy manipulation.
- Greenock district: red-brown clay loam over ironstone; warmer microclimate than Barossa Valley average
- Schubert Vineyard: Shiraz vines circa 1912; dry-grown, ungrafted, family-owned for over a century
- Adjacent Greenock sites: old-vine plantings from 1880s through early 20th century
- Old-vine yields ~2 t/ha; low-intervention farming with focus on natural plant balance
Winemaking Philosophy
Standish winemaking emphasises old-vine fruit expression and traditional Australian premium Shiraz technique. Fruit is hand-harvested at relatively conservative ripeness levels to preserve natural acidity. Fermentation takes place in open vessels (concrete, stainless steel, and small open wooden vats depending on the cuvée), with native yeast on the smaller lots and selected cultured yeast on the larger volumes. Cap management uses traditional plunging and pump-overs. Following primary fermentation, wines are pressed and aged in predominantly French oak hogsheads, with a controlled proportion of new oak (typically 30 to 50 percent for the flagship; lower for the secondary cuvées). Ageing duration is typically 18 to 24 months before bottling. The Relic, a Shiraz-Viognier blend, follows the co-fermentation tradition pioneered in Australia by Clonakilla and refined at Yalumba; the Shiraz and Viognier are co-fermented to allow aromatic linkage between the two varieties.
- Hand-harvest at conservative ripeness; open fermentation in concrete, stainless steel, and wooden vats
- Native yeast on smaller lots; cultured yeast on larger volumes; traditional plunging and pump-overs
- Aged in predominantly French oak hogsheads (30-50% new for flagship); 18-24 months ageing
- The Relic: Shiraz-Viognier co-fermentation following Clonakilla/Yalumba tradition

The Standish range comprises five principal wines, all Shiraz-based with the exception of The Relic. The Standish is the flagship: a blended Shiraz from multiple Greenock old-vine blocks, the wine that established the boutique's reputation. The Relic is a Shiraz-Viognier co-fermented in the Clonakilla model. The Schubert Theorem is a single-block Shiraz from the family's Schubert Vineyard, the deepest expression of the estate's terroir. Lamella is a more accessible Shiraz blend from younger plantings. Borne Out of Fire is a small-production cuvée designed to showcase a specific vintage or block. Total production is approximately 1,500 to 2,000 cases per year across the range, with allocations distributed via mailing list and a small number of fine wine retailers in Australia and key export markets (US, UK, Asia). The brand has developed strong cult status; back-vintages from the early 2000s have appreciated substantially on the secondary market.
- The Standish: flagship blended Shiraz from Greenock old-vine blocks
- The Relic: Shiraz-Viognier co-fermented (Clonakilla/Yalumba tradition)
- The Schubert Theorem: single-block Shiraz from family Schubert Vineyard (circa 1912 vines)
- Lamella + Borne Out of Fire: accessible and small-production cuvées; total ~1,500-2,000 cases/year
Cult Status and Market Position
Standish Wine Company has built one of the strongest modern cult reputations in Australian Shiraz over two decades of consistent production. The wines feature regularly in major Australian wine media (Halliday, The Real Review, Tyson Stelzer, Andrew Caillard MW) with consistently high scores. International recognition has followed, with the wines exported to fine wine markets in the United States, United Kingdom, Hong Kong, Singapore, and continental Europe. Allocations are managed via a mailing list with limited new applicant intake, and the wines also appear at select fine wine retailers and on premium restaurant lists. Pricing on release sits in the AUD $80 to $200 range across the cuvées, with The Schubert Theorem and the limited Borne Out of Fire at the upper end. Back-vintages from the early 2000s have appreciated substantially on the secondary market, with some bottles trading at AUD $400 to $800 at auction.

Standish wines express old-vine Greenock Shiraz with both warm-climate richness and structural elegance. The Standish presents deep ruby colour; aromatics of ripe blackberry, dark plum, black cherry, licorice, mocha, and the warmer Barossa savoury herb character (sage, eucalyptus); the palate is full-bodied with ripe but fine tannins, balanced acidity, and a long finish; alcohol typically 14.5 to 15 percent. The Relic adds floral lift, apricot, and white pepper from the Viognier co-fermentation. The Schubert Theorem from the 1912 Schubert Vineyard shows the deepest concentration, with mineral graphite, savoury earthy depth, and the longest cellaring trajectory (25 to 40 years). Lamella offers an accessible introduction to the house style at younger vine age; Borne Out of Fire varies by release. Across the range, the wines are built for 15 to 30 years of cellaring with the best vintages requiring extended bottle age to fully reveal complexity.
