L'Aventure Winery was founded in 1998 by Stephan Asseo, a French winemaker who trained at L'Ecole Oenologique de Macon in Burgundy and previously owned three Bordeaux properties: Domaine de Courteillac in the Bordeaux Supérieur appellation, Château Fleur Cardinale in Saint-Émilion Grand Cru, and Château Robin in Castillon Côtes de Bordeaux. After two years searching internationally for a New World terroir where he could blend Bordeaux and Rhône varieties outside the constraints of AOC law, Asseo found Paso Robles' Willow Creek District in 1997 and purchased a 127-acre property in 1998. The signature Estate Cuvée, a Syrah-Cabernet Sauvignon-Petit Verdot blend, defined a distinctive cross-tradition American style. Origins and Founding
Stephan Asseo trained at L'Ecole Oenologique de Macon in Burgundy and began making wine in 1982, the same year his family established Domaine de Courteillac in the Bordeaux Supérieur appellation east of Saint-Émilion. Over the following 15 years he expanded the family holdings to include Château Fleur Cardinale, a Saint-Émilion Grand Cru, and Château Robin in Castillon Côtes de Bordeaux, while also managing other Bordeaux estates including Château Guillot-Clauzel in Pomerol. By the mid-1990s Asseo had grown frustrated with AOC restrictions that prohibited blending Bordeaux and Rhône varieties, a combination he believed could produce more complete wines. In 1996 he began an international search that took him to Argentina, Lebanon, South Africa, Napa, and several other regions. He discovered Paso Robles in 1997, and in 1998 he sold his Bordeaux properties and purchased a 127-acre property in the Willow Creek District west of Paso Robles. He named the new project L'Aventure. The first commercial release was the 1998 Optimus made from purchased fruit; the first vintage from estate vines was 2001. Within a decade L'Aventure was widely recognized as one of Paso Robles' most distinctive estates, occupying a singular stylistic position between Bordeaux and Rhône traditions.

Vineyards and Winemaking
The L'Aventure estate occupies a 127-acre property in the Willow Creek District west of Paso Robles, with approximately 57 acres planted to vines. Elevations range from approximately 1,200 to 1,500 feet; soils are predominantly calcareous shale and limestone derived from the Monterey Formation, with thin topsoil. The vineyard is planted to Syrah (foundational, with multiple Northern Rhône clonal selections), Cabernet Sauvignon, Petit Verdot, Mourvèdre, Grenache, plus small parcels of Roussanne, Viognier, and Grenache Blanc. Plantings are organized into designated blocks that supply the specific cuvées. In the cellar, Asseo's winemaking philosophy combines Bordeaux precision with Rhône-style fermentation. Fruit is hand-harvested and hand-sorted, fermented in small open-top tanks with native yeasts, and bottled unfined and unfiltered.
