Franz Keller
FRAHNTS KEL-er
A combined wine and gastronomy institution in the Kaiserstuhl, Franz Keller pairs the Michelin-starred Schwarzer Adler restaurant with a biodynamic 75-hectare estate producing top Pinot family wines from volcanic loess.
Weingut Franz Keller is a major family estate in Oberbergen at the heart of the Kaiserstuhl in Baden, founded in 1969 by Franz Keller Sr. and now led by Friedrich (Fritz) Keller with son Friedrich Keller Jr. The estate is attached to the Schwarzer Adler restaurant, a Michelin-starred dining institution that anchors the family's combined wine and gastronomy identity. Franz Keller farms approximately 75 hectares of Kaiserstuhl volcanic loess soils under full biodynamic certification (Demeter, since 2013), making it one of Baden's largest and most ambitious fine-wine producers across Spätburgunder, Grauburgunder, Weissburgunder, and Chardonnay.

Estate History
Franz Keller Sr. founded the wine estate in 1969 as a complement to the family's Schwarzer Adler restaurant, which had been operating in Oberbergen for generations. From the beginning the project was conceived as a combined wine-and-gastronomy institution, with the restaurant and estate reinforcing each other commercially and stylistically. Through the late twentieth century, Franz Keller Sr. and then his son Friedrich (Fritz) Keller built up vineyard holdings and refined a dry-wine philosophy ahead of much of German wine. Fritz Keller, also a prominent figure beyond winemaking (he served as president of the German Football League SC Freiburg and briefly as DFB president), now shares estate leadership with his son Friedrich Keller Jr. The estate's full conversion to biodynamic certification in 2013 marked the most significant recent evolution.
- Founded in 1969 by Franz Keller Sr. as a wine estate complementing the family's Schwarzer Adler restaurant in Oberbergen
- Friedrich (Fritz) Keller succeeded his father and built the estate to its current scale and reputation
- Friedrich Keller Jr. now shares leadership with his father, representing the third generation
- Full Demeter biodynamic certification since 2013, completing the estate's organic conversion
Vineyard Sites and Terroir
Franz Keller's 75 hectares span multiple Kaiserstuhl sites with the home village of Oberbergen at the center. The Oberbergener Bassgeige is the estate flagship Grosse Lage: a south-facing terraced slope on deep volcanic loess overlaying weathered bedrock that produces structured, age-worthy Pinot Noir and Pinot Blanc. Holdings in the neighboring Achkarrer Schlossberg add a contrasting profile from the Kaiserstuhl's second great Grosse Lage. Additional sites across Oberbergen and surrounding villages contribute to the estate's tiered range. The Kaiserstuhl's volcanic loess geology, unique within Germany, retains heat and produces the smoky, mineral signature shared across the estate's Pinot family wines. The Vulkanit estate range takes its name directly from this volcanic terroir.
- Oberbergener Bassgeige: flagship Grosse Lage on south-facing volcanic loess terraces in the home village
- Achkarrer Schlossberg: second great Grosse Lage offering a contrasting Kaiserstuhl profile
- Additional sites across Oberbergen and surrounding villages provide depth for the tiered range
- Volcanic loess over weathered bedrock: the warmth-retaining geology characteristic of the Kaiserstuhl
Range and House Style
Franz Keller produces an unusually broad fine-wine lineup for a German estate, with serious bottlings across Spätburgunder, Grauburgunder, Weissburgunder, and Chardonnay. The Vulkanit range serves as the estate's identity-defining tier, named for the volcanic terroir and accessible at a moderate price point. Above this, the Bassgeige Grosses Gewächs anchors both red and white programs, with additional GGs from Achkarrer Schlossberg. Chardonnay receives serious attention as part of the modern Pinot-family identity that Friedrich Keller Jr. has championed. The house style favors ripe but balanced fruit, moderate oak influence calibrated by site and tier, and a clean, modern dry-wine expression that has helped position the estate as a contemporary Baden reference.
- Spätburgunder, Grauburgunder, Weissburgunder, and Chardonnay all bottled at serious quality levels
- Vulkanit estate range as an identity-defining tier named for Kaiserstuhl volcanic terroir

Franz Keller has been Demeter-certified biodynamic since 2013, with the full estate worked under organic and biodynamic protocols including the use of preparations, biodiversity initiatives, and reduced sulfur regimes. Vineyard work emphasizes low yields, manual canopy work, and selective hand harvest. In the cellar the family favors spontaneous fermentation with native yeasts on top tiers, with aging split between traditional German oak Stßckfass, French oak barriques (used and new), and stainless steel for fresher styles. New-oak proportions on Grosses Gewächs are calibrated rather than maximalist. The combined wine-and-gastronomy operation also informs the cellar style: wines are made to pair with food, with structural transparency and freshness prioritized over isolated power.

Critical Standing
Franz Keller occupies a distinctive position as one of Baden's largest premium estates and one of the most recognizable names in German wine, thanks in part to the visibility of the Schwarzer Adler restaurant and Friedrich Keller's public profile beyond winemaking. The estate carries top ratings in Gault Millau and Eichelmann and consistently appears in surveys of leading German Pinot producers. Top Grosses Gewächs bottlings from Bassgeige and Achkarrer Schlossberg routinely score in the low to mid 90s from major critics. The estate's international distribution is among the broadest of any Baden producer, with allocations to high-end restaurants and specialist importers worldwide. The combined wine-and-restaurant institution is one of the most singular establishments in German wine.

Franz Keller Spätburgunder shows the cool-toned red fruit signature of Kaiserstuhl volcanic terroir (sour cherry, red plum, pomegranate, dried rose) layered over smoky mineral depth, fine tannins, and a savory finish. The Bassgeige Grosses Gewächs adds structural weight and a salty mineral finish that rewards eight to fifteen years of cellaring. Grauburgunder displays ripe yellow apple, quince, almond, and creamy texture with stony mineral grip. Weissburgunder is more linear and citrus-driven, with white-peach and pear fruit. Chardonnay shows orchard fruit, lemon zest, oyster-shell minerality, and discreet French oak. The Vulkanit range across varieties expresses the estate's smoky volcanic identity at an accessible price point and offers an excellent gateway to the house style.
