From Kitchen to Cellar
François Villard trained as a chef before making one of the wine world's more dramatic career pivots. In 1989 he planted his first vines in Condrieu, and by 1991 he had produced his first 400 bottles. He built his own cellar in 1996 and went on to earn professional agricultural and oenological certification as a self-taught winemaker. His trajectory from passionate amateur to Northern Rhône star is a defining part of the domaine's identity.
- First vines planted in Condrieu in 1989
- First vintage yielded just 400 bottles in 1991
- Own cellar constructed in 1996
- Self-taught, but holds formal agricultural and oenology certification
Appellations and Vineyards
The domaine spans a broad stretch of the Northern Rhône, from Côte-Rôtie in the north down to Saint-Péray in the south. Estate vineyards are situated on steep terraces overlooking the Rhône River south of Lyon, with slopes reaching up to 60 percent. Soils vary across the holdings and include granite, schist, clay-limestone, broken granite, decomposed schist, and quartz. The continental climate, moderated by Mediterranean winds, delivers warm summers and cool nights that are well suited to both Syrah and the aromatic white varieties.
- Vineyards span Côte-Rôtie, Condrieu, Saint-Joseph, Crozes-Hermitage, Saint-Péray, and Cornas
- Steep terraces with slopes up to 60 percent require fully manual vineyard work
- Soils include granite, schist, clay-limestone, and quartz
- Continental climate with Mediterranean winds shapes ripening
Winemaking Philosophy
Villard's approach has evolved considerably since the domaine's early years, when rich, heavily oaked wines were the norm. Today the style is defined by restraint and terroir transparency. Whole-cluster fermentation, native yeasts, and minimal sulfur use are the pillars of production. Villard consistently harvests later than his neighbors to reach full ripeness without tipping into over-ripeness. The result is a range of wines recognized for elegance and authentic fruit expression rather than the oak-driven weight of the earlier era.
- Whole-cluster fermentation used across the range
- Native yeasts and minimal sulfur additions throughout production
- Later harvest timing than most neighbors to optimize ripeness
- Style shifted from opulent and oaked to elegant and minimalist over the years
