Biodynamic family estate at La Chapelle-Heulin run by Jean-Jacques and Rémi Bonnet, producing parcellary Crus Communaux on gneiss, gabbro, and granite.
Domaine Bonnet-Huteau is a family estate based at La Chapelle-Heulin in the heart of Muscadet Sèvre et Maine. The estate has been certified biodynamic by Demeter since 2013 and is now run by Jean-Jacques Bonnet and his son Rémi across approximately 30 hectares of Melon de Bourgogne, Chardonnay, and Folle Blanche. The estate produces parcellary bottlings tied to specific soil types: Les Gautronnières on gabbro, La Périère on gneiss, and the Cru Communal Mouzillon-Tillières bottling from one of the ten recognized terroir zones of Sèvre et Maine. Wines are aged on the lees in underground glass-lined vats and bottled directly off the lees without racking.

- Wines aged on the lees in underground glass-lined vats and bottled directly off the lees without racking, consistent with Sèvre et Maine tradition
Bonnet Family at La Chapelle-Heulin
The Bonnet family has farmed vines around La Chapelle-Heulin for several generations. The estate took its current name when Jean-Jacques Bonnet's mother (a Huteau) married into the family. Jean-Jacques took the lead from the 1980s and built the estate's parcellary work through the 1990s and 2000s, with the conversion to organic farming in the early 2000s and Demeter biodynamic certification arriving in 2013. His son Rémi joined the family business in the 2010s and now leads the cellar work alongside his father. The estate sits at the heart of Sèvre et Maine, with vineyards radiating across La Chapelle-Heulin, Mouzillon, and the surrounding communes.

Three Soil Types, Three Cuvées
The estate's parcellary structure rests on three principal soil types found in the home commune of La Chapelle-Heulin and the neighboring Mouzillon. Les Gautronnières is a single parcel on gabbro, the dark intrusive igneous bedrock most associated with Gorges further south, and the bottling shows a smoky, reductive register and pronounced mid-palate weight. La Périère is a gneiss-grown bottling with a sharper, more vertical profile and saline citrus length. The Cru Communal Mouzillon-Tillières, recognized in 2019 as one of the ten Sèvre et Maine crus, draws on a mix of gneiss and gabbro and serves as the estate's flagship terroir statement.
- Les Gautronnières from a single gabbro parcel; smoky, reductive, with pronounced mid-palate weight
- La Périère is a gneiss-grown bottling with sharper, more vertical profile and saline citrus length
- Cru Communal Mouzillon-Tillières draws on a mix of gneiss and gabbro across the commune
- Mouzillon-Tillières was the seventh of ten Sèvre et Maine crus recognized, in 2019
Demeter Biodynamic Since 2013
The estate has farmed organically since the early 2000s and earned Demeter biodynamic certification in 2013. The viticultural calendar follows biodynamic principles, with preparations 500 and 501 applied on a sidereal schedule, cover cropping between rows, and no synthetic herbicides or pesticides. Yields are kept well below the AOC ceiling, particularly on the parcels destined for cru bottlings. In the cellar, hand-harvested fruit is fermented with native yeasts in underground glass-lined vats, aged on the lees unracked through the relevant sur lie period, and bottled directly off the lees with no fining and only minimal filtration where needed.
- Demeter biodynamic certified since 2013; organic conversion preceded by several years

- Hand harvest, native yeast fermentation, no fining, minimal filtration only where needed
- Wines aged unracked on the lees in underground glass-lined vats and bottled directly off the lees

Alongside the core Muscadet range, the estate produces a small line of Crémant de Loire and méthode ancestrale Pet Nat. The Crémant uses Chardonnay and Pinot Noir from estate parcels, aged on the lees in bottle for at least 18 months, while the Pet Nat is made from Melon de Bourgogne bottled mid-fermentation and labeled as Vin de France. These bottlings extend the estate's relevance into the broader Loire sparkling tradition and into the natural-wine market that has grown around méthode ancestrale across France. The range stays narrow and focused on estate-grown fruit rather than expanding into négociant work.
- Crémant de Loire from estate Chardonnay and Pinot Noir aged 18+ months on the lees
- Méthode ancestrale Pet Nat from Melon de Bourgogne bottled mid-fermentation
- Pet Nat labeled as Vin de France rather than under Muscadet AOC
- Range stays narrow and focused on estate-grown fruit, no négociant work
Why It Matters
Bonnet-Huteau represents the second wave of biodynamic Muscadet, building on the foundation laid by Guy Bossard at de l'Ecu and Jo Landron in the 1990s. The estate's three terroir bottlings (Les Gautronnières, La Périère, Mouzillon-Tillières) demonstrate that the parcellary thesis can extend beyond the founding three Crus Communaux (Clisson, Gorges, Le Pallet) into the newer recognized crus, and the estate has been a primary advocate for the 2019 Mouzillon-Tillières recognition. The Bonnet wines are now widely available in natural-wine-aligned import portfolios and have helped extend the audience for biodynamic Muscadet beyond the appellation's traditional buyers.
