Madeira Estufagem vs. Canteiro: Two Maturation Methods Explained

es-too-FAH-zhehm

Estufagem and canteiro are the two ageing processes used for Madeira wine. In estufagem, the wine is heated in stainless steel estufas for no less than 3 months at 45 to 50°C. Canteiro relies on the natural warmth of sun-heated lodge attics, where wine ages in cask for a minimum of 2 years. The Frasqueira category is reserved for canteiro wines aged at least 20 years in wood.

Two Legal Methods: What Estufagem and Canteiro Actually Mean

Madeira wine is aged by one of two processes. Estufagem and canteiro are the two ageing processes used for Madeira wine, as set out by the Madeira wine institute, IVBAM (Instituto do Vinho, do Bordado e do Artesanato da Madeira). In estufagem, the winemaker controls the heating temperature during ageing. Canteiro relies on the natural warmth of sun-heated lodge attics, where wine ages in cask for a minimum of 2 years. The name comes from the wooden beams, called canteiros, on which the casks are placed.

  • Estufagem: stainless steel estufas heated by a coil of circulating hot water, for no less than 3 months at 45 to 50°C, followed by at least 90 days of rest at room temperature
  • Canteiro: oxidative ageing in cask, normally on the highest floors of the lodge where temperatures are highest, for a minimum of 2 years; the wines develop intense and complex aromas
  • Origins: canteiro came into use after steamships shortened the round-trip voyages that once heated casks at sea, and estufagem was invented later as demand grew
  • Inexpensive wines, mostly made from Tinta Negra, are artificially heated by estufagem, while canteiro wines are aged in cask for anything from five to 50 years
Key Facts
  • Madeira wine is aged by one of two processes: estufagem or canteiro
  • In estufagem, wine is heated in stainless steel estufas by a coil carrying hot water for no less than 3 months at between 45 and 50°C, then rests for at least 90 days at room temperature
  • Canteiro takes its name from the wooden beams, called canteiros, on which the casks rest; the wines age in cask, normally on the warmer upper floors of the lodge, for a minimum of 2 years
  • Canteiro wines may be sold only after at least 3 years, counted from 1 January of the year after the harvest
  • Frasqueira must be produced by the canteiro process, carry a harvest year and a recommended variety, and age continuously in wood for at least 20 years; Colheita needs at least 5 years of continuous ageing in wood
  • Tinta Negra accounts for 80 to 85% of total Madeira wine production
  • Blandy's Duke of Sussex was heated in estufa tanks between 45°C and 50°C over 3 months, while Blandy's Bual 15 Years Old was aged in the canteiro system

How Heat Shapes the Wine: Estufa Tanks vs. Lodge Attics

Estufagem tends to caramelise the sugars and lend something of a 'maderised' taste. Heating the wine during ageing is unique to Madeira, and the estufagem and canteiro methods in the island's wine lodges replicate today the long sea voyages that once heated casks. In canteiro the heat comes from the island itself: the wines age at ambient temperatures in warm lofts that emulate the long sea voyages they once endured. Canteiro is an oxidative ageing in cask.

  • Blandy's Duke of Sussex underwent a cyclic heating and cooling process between 45°C and 50°C over 3 months in estufa tanks, then aged three years in American oak casks
  • After estufagem, the wine may remain in stainless steel or go into wooden casks until the winemaker judges it ready to finish and bottle; these wines are mostly blends
  • Blandy's ages its canteiro wines in seasoned American oak casks at its Wine Lodge in Funchal
  • Barbeito ages its Island Rich Reserve in French oak casks by the canteiro method, selecting wines from warehouses with stable temperatures year round

Flavor and Style: What Each Method Delivers in the Glass

Producers' own tasting notes show the range. Blandy's estufagem-aged Duke of Sussex is a light, delicate Madeira with clean fresh nutty flavors. Its canteiro-aged Bual 15 Years Old shows a bouquet of dried fruits (figs, prunes, almonds), wood and vanilla, and through the ageing process its primary fruit flavors are gently transformed into tertiary dried fruit notes. Bottlings from Blandy's and Barbeito alike will keep for several months after opening.

  • Blandy's Duke of Sussex (estufagem, 3 years, dry): light and delicate with clean fresh nutty flavors; the producer calls it an excellent aperitif wine
  • Barbeito Island Rich Reserve (canteiro, 5 years, Tinta Negra): gold colour, honeyed aromas, ripe citrus and a slight caramel
  • Henriques & Henriques Malvasia 10 years: deep amber with hints of green, aromas of nuts, honey and wood, and a palate of dried fruit, coffee and caramel
  • Blandy's Malmsey 15 Years Old (canteiro): dark golden brown, dried fruits, wood, toffee and vanilla, with a finish of nuts and dark chocolate

From Harvest to Classification: The Full Production Process

After harvest, grapes are fermented and then fortified with neutral grape spirit at 96% alcohol to arrest fermentation at the desired sweetness level. The moment fermentation is stopped is chosen for the sweetness wanted, giving four types of wine: dry, medium dry, medium sweet and sweet. The fortified base wine is then directed to either estufagem or canteiro. For estufagem, wine is placed in stainless steel estufas heated by a coil of circulating hot water for no less than 3 months at 45 to 50°C, then rests for at least 90 days at room temperature before it stays in stainless steel or moves to wooden casks. For canteiro, the wine goes into seasoned oak casks placed on the upper floors of the lodge, where it ages under the natural warmth of the island sun. For Blandy's Bual 15 Years Old and Malmsey 15 Years Old, the wine is then gradually transferred from the attics to the milder middle floors and eventually to the cooler ground floor.

  • Fermentation duration controls sweetness: Blandy's fortifies its rich-style wines after approximately 24 hours and leaves drier styles to ferment for 7 days before fortification with 96% neutral grape spirit
  • Blandy's fortifies its Malmsey 15 Years Old after approximately 48 hours, its Bual 15 Years Old after approximately 3 days and its dry Duke of Sussex after approximately 5 days
  • Today all Madeira wines have between 17.5% and 21% alcohol strength
  • Canteiro wines may not be sold until at least 3 years have passed, counted from 1 January of the year after the harvest

Which Producers Use Which Method, and Why

Each house makes its own choices. Blandy's uses the canteiro method, in American oak casks in the warm attics of the lodge, for wines of a superior quality. Barbeito ages its Island Rich Reserve and Island Dry Reserve for 5 years in French oak casks by the canteiro method. Ricardo Freitas joined Barbeito in 1991 and faced his first harvest alone in 1993. Henriques & Henriques, founded in 1850 by João Gonçalves Henriques, states that it is the only company to own its own vineyards; its largest vineyard, in the parish of Quinta Grande in Câmara de Lobos, covers 10.3 hectares and is also where its winemaking center is located.

  • Blandy's cooperage: mainly American oak, Brazilian satinwood and chestnut, including pipas of 650 litres and toneis of 700 litres
  • Barbeito Island Dry Reserve: 80% Tinta Negra and 20% Sercial, aged in French oak casks for 5 years by the canteiro method
  • Henriques & Henriques also buys grapes from winegrowers with whom it has long-standing relationships
  • For depth and complexity, one critic advises looking for canteiro wines rather than the inexpensive estufagem wines

Age Indications, Colheita and Frasqueira

Madeira's legal categories tie the wine to age and, for Frasqueira, to method. Madeira cannot be bottled with less than 3 years, so a label with no age statement means at least 3 years of ageing. The permitted age indications are 5, 10, 15, 20, 30, 40, 50 and over 50 years. Colheita carries a harvest year and must age continuously in wood for at least 5 years. Frasqueira carries a harvest year and a recommended variety, must be produced by the canteiro process, and needs a minimum of 20 years of continuous ageing in wood.

  • Age indications of 5, 10, 15, 20, 30, 40, 50 and over 50 years are allowed when the wine meets the quality standard for that age
  • Colheita: harvest year, at least 5 years of continuous ageing in wood
  • Frasqueira: harvest year and recommended variety, canteiro process, at least 20 years of continuous ageing in wood
  • Sweetness terms by Baumé degree: Seco below 1.5°, Meio Seco between 1° and 2.5°, Meio Doce between 2.5° and 3.5°, Doce above 3.5°; Extra Seco may be used at or below 0.5°

Flavor Profile

Producer tasting notes describe the estufagem-aged Blandy's Duke of Sussex as light and delicate with clean fresh nutty flavors, and canteiro-aged wines with dried fruits such as figs, prunes and almonds, wood, vanilla, toffee, honey, caramel and nuts. Blandy's attributes the dried fruit notes of its canteiro wines to the ageing process, which gently transforms the primary fruit flavors.
