The project's name is literal: all vineyard work is performed by draft horses rather than mechanized equipment. Baron, the eldest son of Champagne house Baron Albert (family roots dating to 1677 in the Marne Valley), modeled the estate after the pre-industrial viticultural practices of his ancestors. The use of horses allows cultivation between rows as narrow as three feet, a spacing impossible for any modern tractor. For Baron, the project is both a philosophical statement about the relationship between farmer and land and a practical means of achieving vine densities comparable to the great estates of Burgundy and the Northern Rhone.

The name refers to the echalas staking system traditional in the Northern Rhone. The Tribe Vineyard covers three acres of Syrah at three-and-a-half-by-three-and-a-half-foot spacing (3,555 vines per acre), with each vine trained to a single stake. High Contrast includes three acres of Syrah and a third of an acre of Viognier, following the contour of what was once the Walla Walla River. Fiddleneck is the newest vineyard, planted to Grenache.
