History and Ownership
The estate's name is a direct tribute to its first recorded owner: the Council of the Cathedral of Valladolid, a body composed of 22 canonic monks. The property was purchased in 1842 by Toribio de Lecanda y Campo, then passed to the Cid family in 1931. Luis Sanz Busto subsequently acquired the estate and oversaw its transformation into a modern winery, releasing the debut vintage in 1989. Today, the operation is led by siblings Iván Sanz as general director and vineyard manager, and Belén Sanz as oenologist and technical director.

Location and Terroir
Dehesa de los Canónigos sits within Pesquera de Duero, a village at the heart of what producers and critics call Ribera del Duero's Golden Mile. The total estate covers 500 hectares, with 60 hectares planted to vines at 800 metres above sea level. The climate is Mediterranean-Continental, bringing warm, sunny summers, cold winters, and significant diurnal temperature variation that underpins the region's capacity for wines with both richness and freshness. Soils across the Duero Valley are diverse, and the estate takes advantage of this variation through individual plot vinification.

- Vineyards at 800 metres elevation within a 500-hectare estate
- Mediterranean-Continental climate with pronounced diurnal temperature shifts

Viticulture and Grapes
The estate grows Tempranillo (known locally as Tinto Fino), Merlot, Cabernet Sauvignon, and Albillo Mayor across its 60 organically certified hectares. All fruit is estate-grown, and organic certification covers the winery's own vineyards. Individual plot vinification allows the team to preserve the distinct character of each parcel before blending decisions are made. This approach reflects the Sanz family's commitment to expressing the specificities of their Golden Mile terroir rather than blending across large, undifferentiated lots.
- Grapes grown: Tempranillo (Tinto Fino), Merlot, Cabernet Sauvignon, and Albillo Mayor
- 100% estate-grown fruit; no purchased grapes
- Organic certification achieved for own vineyards
- Individual plot vinification preserves parcel-level character
